A festive salad with a sweet coriander dressing

Ingredients
For the salad:
200g
baby spinach & red leaf
(Woolies Christmas range)
400g
cooked beetroot
2
round
goats milk feta
3
tbsp
sunflower seeds
For the dressing:
½
red onion
finely chopped
1
handful
fresh corainder
finely chopped
1
clove
garlic
pressed
½
cup
olive oil
¼
cup
white balsamic vinegar
2
tbsp
sweet chilli sauce
(sub 2 tsp brown sugar)
freshly ground salt & black pepper
Instructions
Arrange the spinach and red leaf in a bowl. Place beetroot on top, then goat's cheese and sprinkle with sunflower seeds.
Combine all ingredients listed under the dressing and mix well.
Do not dress the salad, serve the dressing on the side so each person can dress as they dish. This way you ensure that your salad doesn't go soggy.
This dish goes well with pork, chicken or any red meat.
