Resharing this beetroot and goats cheese salad from last Christmas as it’s the one I make most often. I do different versions of it, but the dressing remains the same. Also haven’t posted it to my website yet and trying to get all my recipes to one location, so here you go…
My guests have been known to put this dressing all over their steak, chicken, lamb etc. I swear if I made enough they would drink it too.
I haven’t seen the Christmas salad range in store yet at Woolies this year, but I did find them online. The red leaf is just so beautiful and will bring Christmas cheer to any table – find them here to make your own beetroot and goats cheese salad this Christmas day.

Beetroot & Goats cheese salad
Ingredients
For the salad:
- 200g baby spinach & red leaf (Woolies Christmas range)
- 400g cooked beetroot
- 2 round goats milk feta
- 3 tbsp sunflower seeds
For the dressing:
- ½ red onion finely chopped
- 1 handful fresh corainder finely chopped
- 1 clove garlic pressed
- ½ cup olive oil
- ¼ cup white balsamic vinegar
- 2 tbsp sweet chilli sauce (sub 2 tsp brown sugar)
- freshly ground salt & black pepper
Instructions
- Arrange the spinach and red leaf in a bowl. Place beetroot on top, then goat's cheese and sprinkle with sunflower seeds.
- Combine all ingredients listed under the dressing and mix well.
- Do not dress the salad, serve the dressing on the side so each person can dress as they dish. This way you ensure that your salad doesn't go soggy.
- This dish goes well with pork, chicken or any red meat.
