Asian inspired Broccoli Salad

Ingredients
  

  • 500 grams tenderstem broccoli
  • 50 grams walnuts
  • 2 tsp sesame seeds for garnish

Dressing:

  • 2 tbsp peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sriracha
  • 2 tbsp water
  • juice of a small lime
  • 2 tbsp sesame seeds
  • 2 cloves garlic pressed

Instructions
 

  • Cook your broccoli for about 5 minutes, then place in cold water to stop the cooking. You don't want to cook them too long, they should still be crisp.
  • Add walnuts to a dry non-stick pan and toast. Remove and set aside, then do the same with the sesame seeds.
  • Place all of the dressing ingredients into a jug / mixing bowl and combine well.
  • Plate the broccoli, sprinkle with walnuts and sesame seeds, drizzle with the dressing and enjoy!
