Crisp broccoli with toasted walnuts, finished off with an Asian inspired, spicy peanut dressing. This salad goes well with chicken or steak.
Asian inspired Broccoli Salad
Ingredients
- 500 grams tenderstem broccoli
- 50 grams walnuts
- 2 tsp sesame seeds for garnish
Dressing:
- 2 tbsp peanut butter
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sriracha
- 2 tbsp water
- juice of a small lime
- 2 tbsp sesame seeds
- 2 cloves garlic pressed
Instructions
- Cook your broccoli for about 5 minutes, then place in cold water to stop the cooking. You don't want to cook them too long, they should still be crisp.
- Add walnuts to a dry non-stick pan and toast. Remove and set aside, then do the same with the sesame seeds.
- Place all of the dressing ingredients into a jug / mixing bowl and combine well.
- Plate the broccoli, sprinkle with walnuts and sesame seeds, drizzle with the dressing and enjoy!
