Cut the butternuts in half lengthways. Use a spoon to scoop out the seeds, then drizzle with a little olive oil and season with salt and black pepper. Place in the air fryer, cut side up, and cook at 200 for 30 to 40 minutes or until tender.
Follow the same process with the beetroot. If you have a large enough air fryer you can cook them together with the butternut. Alternatively, make them the day before and keep in the fridge.
Prepare the dressing by combining all of the ingredients. Whisk well.
Dice the cooked beetroot and place inside the butternut together with crumbled feta.
Finish off with a drizzle of the dressing, fresh coriander leaves and toasted sesame seeds.
