Quick and easy air fryer butternut boats with a delicious Tahini dressing. Perfect side to have with chicken.
Air Fryer Butternut boats with a Tahini dressing
Equipment
- Air Fryer
Ingredients
- 2 butternuts
- 2 beetroots
- 1 feta round
- fresh coriander
- toasted sesame seeds
For the dressing:
- 2 tbsp tahini paste
- juice of half a lime
- 3 tbsp water
- 1 clove garlic pressed
- freshly ground salt and black pepper
Instructions
- Cut the butternuts in half lengthways. Use a spoon to scoop out the seeds, then drizzle with a little olive oil and season with salt and black pepper. Place in the air fryer, cut side up, and cook at 200 for 30 to 40 minutes or until tender.
- Follow the same process with the beetroot. If you have a large enough air fryer you can cook them together with the butternut. Alternatively, make them the day before and keep in the fridge.
- Prepare the dressing by combining all of the ingredients. Whisk well.
- Dice the cooked beetroot and place inside the butternut together with crumbled feta.
- Finish off with a drizzle of the dressing, fresh coriander leaves and toasted sesame seeds.
