Equipment

  • Air Fryer

Ingredients
  

  • 2 butternuts
  • 2 beetroots
  • 1 feta round
  • fresh coriander
  • toasted sesame seeds

For the dressing:

  • 2 tbsp tahini paste
  • juice of half a lime
  • 3 tbsp water
  • 1 clove garlic pressed
  • freshly ground salt and black pepper

Instructions
 

  • Cut the butternuts in half lengthways. Use a spoon to scoop out the seeds, then drizzle with a little olive oil and season with salt and black pepper. Place in the air fryer, cut side up, and cook at 200 for 30 to 40 minutes or until tender.
  • Follow the same process with the beetroot. If you have a large enough air fryer you can cook them together with the butternut. Alternatively, make them the day before and keep in the fridge.
  • Prepare the dressing by combining all of the ingredients. Whisk well.
  • Dice the cooked beetroot and place inside the butternut together with crumbled feta.
  • Finish off with a drizzle of the dressing, fresh coriander leaves and toasted sesame seeds.
