Save this for the next time you need to sort breakfast in a hurry! This Tortilla Baked Quiche is so quick to make and absolutely delicious, it has to be one of my favourite breakfasts!

Prepped in 5 minutes, cooks in 10 to 15. Low carb, high protein, quick, easy, delicious - what’s not to love!?

Around 200 CAL per slice with 15g of protein per slice. This is meant to be shared as 2 slices are more than enough per serving.

Here’s what you need:
1 Reduced carb tortilla
4 Eggs
1 Tsp garlic powder
1 Tsp onion powder
Salt & pepper to taste
100g Low fat cottage cheese of choice
Handful cherry tomatoes
100g Smoked chicken or cold meat of choice
Handful baby spinach
60g Cheddar, grated

To serve:
Fresh basil
Avocado

Directions:
Follow the steps in the video. Cook for 10 to 15 minutes at 190C to 200C (air fryer or oven works) and enjoy your high protein, low-carb breakfast!

Asian Beef, Cabbage & Rice Bowls 🍲 (Save for later!)

A one pot meal that comes together in no time, easy to prepare for a weeknight dinner, but also perfect for meal prepping.

Basically a Beef Chow Mein but I felt like using rice and not noodles. The perfect way to use up any leftover rice you have - also so cost effective.

This recipe makes 4 generous portions at a cost of under R40 per portion. Swap out the beef for chicken to save on calories and Rands.

What you need for this recipe:

600g Beef strips
4 Tbsp soy sauce
4 Tbsp oyster sauce
2 Tbsp honey
2 Tbsp rice vinegar
1 Tbsp sesame oil
1 Tbsp Maizena

1 Onion
4 Spring onions
250g Mushrooms
1/2 Head of cabbage
1 Carrot
4 Cloves garlic
1 Cup peas
2 - 3 Cups rice (cooked)
Salt & pepper to taste

Follow the steps in the video. Garnish with spring onion and sesame seeds and enjoy!

MEAL PREP: Chicken Burrito Bowls 🤩 (save for later!)

Meal prepping on a budget? We’ve got you covered. For less than R25 per portion, you can enjoy these tasty and affordable Burrito Bowls all week long!

You guys are always asking where I get my chicken fillets from, and the answer is always @the_grocery_express . These fillets turn out so juicy no matter how you cook them!

In addition to the chicken, you need 5 other ingredients from The Grocery Express, and then just some seasonings you already have in your pantry.

This recipe yields 6 bowls and below is what you’ll need to make them. Pop into The Grocery Express at 165 Mimosa Road this weekend to grab your ingredients and prep for the week ahead.

Ingredients:
1 Onion, diced
1 Tsp garlic powder
1 Tsp onion powder
1 Tsp ground cumin
1 Tsp paprika
3 Cloves garlic, pressed
1 Chilli, chopped
1 Tin crushed tomatoes
2 Tbsp brown sugar
Salt & black pepper
1kg Chicken breast fillets
3 Cups rice (measured cooked)
1 Tin black beans
1 Tin corn
1 Tomato, diced
½ Red onion, sliced

For the yoghurt dressing:
1 Cup plain yoghurt
1 Clove garlic
Juice of a small lime
Handful coriander leaves
Salt & black pepper

Place all the dressing ingredients into a blender a blitz until smooth. For the rest, follow the instructions in the video and enjoy!

Shrimp Egg Muffins

Keep these in the fridge for those days when you need breakfast on the run.

At only 165 Calories and 16g Protein per muffin, you only need 2 muffins to get over 30g of protein (at only 330 Calories) per meal.

Serve with a dollop of cottage cheese and some greens and enjoy!

This recipe makes 6 large muffins (or 12 if you use the standard sized muffin tray). Calories and protein specified according to large muffin.

INGREDIENTS:
9 Eggs
1 Tsp baking powder
3 Tbsp flour
1 Tsp garlic powder
1 Tsp onion powder
Salt & pepper
1 Cup peppers, chopped
1/2 Cup spring onion, chopped
1 Cup baby spinach, chopped
120g Shrimp (uncooked)
Herbs of choice (I used coriander)

METHOD:
Follow the steps in the video, cook at 190 C for 15 minutes and you’ve got breakfast sorted for the rest of the week.

Note: Flour and baking powder is added so the muffins hold their shape. If you use eggs only, the muffins will deflate as soon as you take them out the oven.

I’m always happy to get back into routine after a long break. This means meal prepping starts this week as I return to work on Wednesday.

These chicken and rice salad bowls are 485 Calories per serving and is a satisfying and filling meal. Ingredients below will make 4 servings.

WHAT YOU NEED FOR THIS RECIPE:
800g Chicken breast fillet
20 Cherry tomatoes
2 Spring onions
500g Green beans
2 Cups spinach
1 Cup brown rice (measured uncooked)
2 Tbsp olive oil
1 Tbsp mustard
2 Tbsp white balsamic
Juice of a lemon
1 Clove garlic

WHAT TO DO:
1. Dice the chicken. Heat a non-stick pan over high heat and coat with spray and cook. Add the chicken, season with salt, garlic powder, onion powder and smoked paprika. Cook for 5 to 7 minutes until brown.

2. Cook rice according to package instructions and season with salt.

3. Flash fry green beans in a little olive oil. Season with salt and pepper. When ready to remove from heat, crush a clove of garlic over the beans and stir through.

4. Dice the cherry tomatoes and spring onions.

5. Make a dressing by combing the olive oil, mustard, vinegar, lemon juice and adding a clove of crushed garlic. Combine well.

6. Divide all ingredients into 4 equal portions and layer into your meal prep containers as per the video.

7. When ready to eat, place a plate on top of the container and flip over.

I don’t warm this meal. I take it from the fridge in the morning and place into my lunch bag, where I’ll keep it until I’m ready to eat lunch time.
