Whisk egg yolks and sugar until completely combined, then put aside.
On medium heat, bring milk, cream, vanilla essence, nutmeg and cinnamon to a simmer.
Slowly add liquid mixture to eggs, continuing to whisk.
Add back to pot and simmer for 5 minutes while stirring.
Remove from heat, add Amarula and Cognac and give it a stir. Let it cool completely and then chill in the fridge overnight.
In the morning, transfer to a food processor and blend for a minute before serving.
Top with ground nutmeg and / or cinnamon and enjoy!
