Add butter to a large skillet over medium heat. Add the apples and cook for about two minutes before adding the sugar. Cook for a minute then add the cinnamon and caramel essence. Cook for another minute or two until apples have softened and the sugar and butter have caramelized into a syrup consistency. Remove from heat, set aside and let cool.
Roll out the puff pastry onto a floured surface. Cut in half, then cut those halves into 4 squares each. Line a baking tray with baking paper and place the squares onto the paper.
Fold the edges in, roughly 1cm, then place the apples across the squares, 8 to 9 slices each. Once all the apple has been placed onto the puff pastry, drizzle some of the syrup left in the pan over each square. Place in the oven and bake for 20 minutes.
Remove from oven, drizzle with a little fresh cream and give it a dusting of icing sugar. Enjoy!
