A perfectly cooked Tomahawk Steak topped with a Prawn Cocktail, then topped with crispy Octopus = the Surf & Turf Braai of your dreams. ⁣
⁣
All these lovely fresh ingredients from my local @foodloversmarket store! ⁣
⁣
Tomahawk steak:⁣
Seasoned with salt, pepper, olive oil & balsamic vinegar. ⁣
⁣
Octopus:⁣
Precooked, boiled in water with bay leaves, garlic, lemon and peppercorns for 40 minutes. ⁣
⁣
Prawns:⁣
Seasoned with garlic, chilli & lime. ⁣
⁣
Prawn cocktail:⁣
Braaied prawns⁣
2 Tbsp Mayonnaise ⁣
2 Tbsp Tomato sauce ⁣
1/2 Tbsp Worcestershire sauce⁣
Garlic Tabasco (to taste)⁣
Salt & black pepper⁣
Handful fresh parsley & coriander, chopped⁣
Wild rocket⁣
⁣
Combine all the prawn cocktail ingredients and place on top of the steak. Finish off with octopus and serve with a fennel salad, garlic bread and a delicious red wine. ⁣

GREEN GODDESS PASTA SALAD ⁣
⁣
A classic Green Goddess dressing is made with mayo and sour cream, but I skip both and add an avo and some plain yoghurt for a healthier version. ⁣
⁣
This salad goes well with a roast or a braai. Alternatively you could add some chicken and make it a meal on its own. ⁣
⁣
Salad ingredients:⁣
250g (raw) Casarecce pasta ⁣
1/2 Cup spring onion, chopped⁣
1/2 Cup green pepper, chopped⁣
1/2 Cup olives, chopped⁣
12/ Cup cherry tomatoes, chopped⁣
⁣
Dressing ingredients:⁣
1 Avocado⁣
1 Clove garlic⁣
Handful basil⁣
Handful chives⁣
4 Anchovy fillets⁣
1/2 Cup plain yoghurt⁣
Salt and black pepper⁣
Juice of half a lemon⁣
⁣
Blitz all ingredients until smooth, then combine all salad ingredients and coat with the dressing. ⁣
⁣
Refrigerate for at least an hour, then serve and enjoy! ⁣

Celebrating Heritage Month with Food Lover’s Market! 🇿🇦

A rack of lamb from the @foodloversmarket Butchery, marinated in a delicious Greek style marinade and cooked on the fire - a must try this braai month!

What you need for this recipe:

GREEK STYLE MARINADE
4 Cloves garlic
1-2 Tbsp sea salt flakes
1 Bunch fresh oregano
Zest and juice of a large lemon
1 Tbsp apple cider vinegar
2 Tsp hot mustard
4 Tbsp olive oil (or as needed to make the marinade nice and runny)
Pepper to taste

In a pestle and mortar, grind the garlic and salt to a paste, then add the oregano and grind to a smooth consistency.

Add the lemon zest and juice and mix thoroughly. Mix in the vinegar, mustard and olive oil.

Spoon evenly over all sides of the lamb and let marinate for at least an hour, then cook to your liking.

BRAAI TIP:
You’re going to need different heat zones for braaing a rack of lamb. Once you’ve browned it over high heat, move it to lower heat to ensure the outside doesn’t overcook while the inside is still raw.

This Winter has been long! I’m so ready to move on to sunny days, fresh, lighter meals and crisp, ice cold wines and bubbly 🥂⁣

These prawn cucumber boats are perfect for entertaining - perhaps cut them into bite sized pieces and arrange on a pretty platter 😍⁣

Meal Prep Sunday with the ingredients you voted for last week.

What you gave me:
Beef, greens, cabbage and potatoes.

What I made:
Cottage pie with beef mince, topped with a layer of spinach (greens) before adding the mashed potato (which included the cabbage).

Add the cabbage to the potatoes for the last 5 minutes of your cooking time. Drain and mash all together. I also keep my potato skins on as I like that bit of texture it adds.

INGREDIENTS (4 portions)

For the mince:
1 Onion, diced
2 Cloves garlic, pressed
500g Lean Beef Mince
1 Tsp garlic powder
1 Tsp onion powder
1 Tsp beef stock powder
1 Tsp vegetable stock powder
50g Sachet tomato paste
1 Tbsp sugar
1 Cup water
1 Cup mixed veg
Salt and black pepper

Second layer:
2 Cups cooked spinach

For the mash:
4 Potatoes,
1/4 Cabbage head
1/2 Cup milk
1 Tsp garlic powder
1 Tsp onion powder
Salt & white pepper

Final layer:
120g Cheddar, grated

Cook your mince, spinach and mash separately, then layer into your meal prep container as per the video.

Bake at 200 C for around 15 min, remove from oven and top with cheese, then back into the oven for another 5 min until the cheese has melted.

Each portion is around 550 Calories with 40g of Protein.

Beef Taco Bowl with Avocado Lime dressing⁣
⁣
Quick and easy to prepare and can be put together using leftovers. ⁣
⁣
What I generally use for Beef Taco Bowls:⁣
Rice⁣
Corn⁣
Beans⁣
Tomato⁣
Red onion⁣
Beef steak / beef mince ⁣
⁣
For the Avocado Lime dressing:⁣
1 Avocado⁣
1 Tbsp cottage cheese⁣
1 Clove garlic⁣
1 Green chilli⁣
Juice of a small lime⁣
Handful fresh coriander ⁣
Salt and black pepper⁣
Couple of Tbsp Water⁣
⁣
Add all ingredients except water to a blender and blitz until smooth. Add a little water and blitz again. Continue to add water until desired consistency is reached. ⁣
⁣
Drizzle a generous amount of dressing over your Taco Bowl and enjoy!⁣
⁣

Meal Prep Sunday - Loaded Sweet Potatoes⁣

You gave me chicken, corn, carrots and sweet potatoes to work with this week, so I give you loaded sweet potatoes. ⁣
⁣
Orange sweet potatoes covered with pulled chicken curry, topped with cheddar, and baked until the cheese has melted. This is so good, you might not believe that what you’re eating is actually healthy and just over 500 CAL per portion. ⁣
⁣
For the pulled chicken curry you need the following:⁣
⁣
1 Onion, chopped⁣
1 Tsp cumin seeds⁣
4 Cloves garlic, pressed⁣
2 to 3 Tsp curry powder of choice ⁣
1 Tsp garlic powder⁣
1 Tsp onion powder⁣

4 Chicken breast fillets⁣
2 Carrots, diced ⁣
1/2 Tin of corn⁣
50g Fat free cottage cheese⁣

Create your curry sauce, then cook the chicken and carrots in the sauce for about 20 min. Add corn at the end, then use two forks to pull apart the chicken breasts. Remove from heat and stir through the cottage cheese. ⁣

Roast the sweet potatoes, then halve them, cover with a generous amount of pulled chicken curry, top with cheddar and bake until the cheese has melted. ⁣

Garnish with fresh coriander and enjoy. ⁣
⁣
These will keep in the fridge for 3 to 4 days. I would not recommend freezing them. ⁣

Meal Prep Sunday - Loaded Sweet Potatoes⁣ ⁣ You gave me chicken, corn, carrots and sweet potatoes to work with this week, so I give you loaded sweet potatoes. ⁣ ⁣ Orange sweet potatoes covered with pulled chicken curry, topped with cheddar, and baked until the cheese has melted.
