I’m not one for sweet drinks. When I do Margaritas it’s usually Lime frozen Margaritas (recipe linked below). However, this Spicy Pineapple Margarita is definitely worth a try.
The natural sweetness of the pineapple is just the right amount of sweet for me. Combined with a hint of chilli, ginger and coriander, this drink tastes like Mexico. Slightly sweet, slightly spicy, absolutely delicious!
I feel I’ll be making lots of these this coming summer. All you need is a cocktail shaker and a cocktail muddler. If you don’t have a muddler, just use the back of a large wooden spoon. When serving larger parties I would probably do this in a blender though.

Spicy Pineapple Margarita
Equipment
- Cocktail shaker
- Cocktail muddler
Ingredients
- ½ cup fresh pineapple cubed
- 4 slices green chilli rounds
- 1 sprig fresh coriander
- 1 cm fresh ginger chopped
- 5 blocks ice
- 2 tots tequila resposado
- juice of a lime
- 1 tsp honey
Instructions
- Add the pineapple, chilli, coriander and ginger to the cocktail shaker, then muddle. Do this several times until the pineapple has turned to juice and all the flavours have combined.
- Add the ice, then pour the tequila and lime juice over the ice. Add a tsp of honey, close the cocktail shaker and shake for at least 30 seconds.
- Pour over crushed ice, garnish with some coriander and chilli, then sit back and enjoy!
