I’ve done a meat free, budget friendly version of my Chilli Con Carne for you, perfect for meat free Mondays.
Using red lentils as a substitute to mince, this recipe is easy and takes just over 40 minutes to prepare, perfect for a weeknight (meat free Monday) meal.
There is nothing unhealthy about this recipe except maybe the sugar (works out to about half a teaspoon per serving), but feel free to replace with sweetener.
The cost of the recipe comes to around R120, for 4 to 6 portions. That’s only R20 to R30 per portion, so affordable and still packed with lots of flavour!
Meat Free Chilli Con Carne
Ingredients
- 1 onion diced
- 1 green pepper diced
- 1 jalapeño diced
- 5 cloves garlic pressed
- 1 ½ cups red lentils
- ½ tsp chilli powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp ground cinnamon
- 4 tsp ground cumin
- 1 tin tomatoes
- 2 tsp brown sugar
- 1 sachet vegetable stock
- 2 cups water
- 1 tin black beans rinsed
- 1 tin corn rinsed
Instructions
- Over medium heat, fry onion in a little olive oil for about two minutes. Add green pepper and fry for another two minutes, then add jalapeño and garlic and fry for a minute before adding the lentils and all the spice.
- Fry for another minute before adding the tomatoes, sugar, stock and water.
- Cook for about 30 minutes or until lentils are soft, adding water as needed, then add beans and corn. Cook for a further 5 minutes and remove from heat.
- Serve with brown rice or wraps, garnish with red onion, coriander and a dollop of plain yoghurt and enjoy!
