Cottage Pie with Cheesy garlic mash

Ingredients

For the mince:

  • 1 onion diced
  • 1 celery stalk finely chopped
  • 3 cloves garlic pressed
  • 1 carrot grated
  • 500 grams beef mince
  • 2 tbsp flour
  • 1 tin diced tomatoes
  • 1 tbsp brown sugar
  • 1 beef stock cube
  • 1 cup water
  • 1 dash worcestershire sauce
  • 2 tbsp fresh thyme (sub 2 tsp dried thyme)
  • 2 bay leaves
  • ½ cup frozen peas
  • salt & pepper

For the mash:

  • 4 potatoes
  • 2 tbsp butter
  • 1 tsp garlic powder
  • salt and pepper
  • 50 ml milk
  • 50 grams mature cheddar

Instructions

  • Fry onion and celery for a minute, add garlic and carrot and fry for another minute.
  • Add the mince and brown. Once the mince is brown, add the flour, tomatoes, sugar, stock cube, water, Worcestershire sauce, thyme and bay leaves.
  • Season with salt and pepper and cook uncovered for 20 minutes or until mince mixture has thickened. Add peas 5 minutes before the end of the cooking time. Remove from heat and let cool slightly.
  • For the mash, peel and dice the potatoes. Cook in salted water until soft. Drain the water and let them steam dry, about 5 minutes.
  • Add a chunk of butter, salt, pepper, garlic powder, cheese and milk. Mash everything together using a potato masher, until no lumps remain.
  • Dish the mince into an ovenproof dish (or individual ramekins), top with mash, grate some parmesan over and place in the oven for about 10 minutes, until the mash is golden brown.
  • Serve with a side salad and enjoy!
